Herb Crusted Salmon Fillets:

Dill is the herb that is used in this pesto crusted salmon recipe. It possesses various valuable properties such as, antidiabetic, anticancer, antistress, antioxidant, cardioprotective, diuretic and antispasmodic properties. The Ingredients

Main Ingredients

  1. Whole side salmon (1 Kg)
  2. Mascarpone cheese (100 g)

Spices & Condiments

  1. Garlic (2 cloves) – Crushed
  2. Pine nuts (60 g) – toasted

    Parmesan Cheese

  3. Parmesan cheese (35 g) – coarsely gratedParmesan Cheese
  4. Lime rind (2tbs) – Grated
  5. Olive oil (60 ml)
  6. Salt to taste

Herbs

  • Dill (35g); fresh and chopped
  • Watercress (35g); fresh and chopped

The Directions (in Easy steps)

(A) Preparing the Salmon

  1. Remove the skin and bones from the salmon.
  2. Place the salmon on a large sheet of aluminum foil.
  3. Spread with Watercress and Dill Pesto.
  4. Wrap in the aluminum foil.

(B) Grilling the Salmon

  1. Grill the salmon, pesto-side up, on heated oiled barbecue, uncovered for about 15 minutes.
  2. Open the aluminum foil.
  3. Grill for about 5 more minutes or until salmon is just cooked through.
  4. Remove the salmon from the aluminum foil.
  5. Cut salmon into 4 pieces, the top with mascarpone cheese.

(C) Watercress and Dill Pesto

  1. Blend or process the watercress, dill, garlic, nuts, parmesan cheese, and lime rind until just chopped.
  2. With motor operating, gradually pour in the olive oil.
  3. Process until thick.
